Dark Chocolate and Salted Pretzel Tart
Hi there! I’m currently blogging from the floor, since we are waiting delivery of our new couch! The couch we bought from Costco over 2 years ago had springs start sticking up, making it very uncomfortable on the bum. Since they have a lifetime warranty on things you buy there, we took it back for a FULL REFUND! Woot!! Our new couch arrives on Tuesday, so it’s either dining chairs, or floor and cushions for me till then 😛
Anyhoo, I made this insanely rich tart for Father’s Day dessert the other week. It was sooo rich I couldn’t finish a slice. The saltiness of the pretzels did help, but if there was a peanut butter swirl going on, that might have helped cut through the fudge tart. I left the rest with Dad to demolish throughout the week. I don’t think I’ll be making it again, but if I do, serving sizes with be small squares instead.
Dark Chocolate and Salted Pretzel Tart
Donna Hay
120g digestive biscuits
120g mini pretzels, plus 14-16 extra pretzels, to decorate
180g unsalted butter, melted
375g dark chocolate, finely chopped
310ml single (pouring) cream
2 tablespoons butterscotch-flavoured liqueur
75g 70 per cent dark chocolate, melted
1. Place the biscuits and pretzels in a small food processor and blitz to fine crumbs. With the motor running, add the butter and process until combined. Press the biscuit mixture into the base and sides of a lightly greased 36cm x 13cm x 2.5cm loose-bottomed fluted tart tin and refrigerate for 1 hour.
2. Place the dark chocolate, cream and liqueur in a medium saucepan over low heat and stir until the chocolate has melted. Set aside for 10 minutes. Pour the chocolate into the biscuit shell and return to the refrigerator for 2-3 hours or until completely set.
3. Using a fork, dip the pretzels in the melted chocolate and place on top of the tart to decorate. Return to the refrigerator for 40 minutes or until set.
Serves 10-12.

This looks awesome! Chocolate tarts are so beautiful to make but I always find that I can’t eat much of it due to its richness which is a shame! Didn’t know about the life time guarantee thing on Costco stuff so thanks for the tip!!!!!
