Kept seeing posts that cottage cheese sold out everywhere and thought… what are all the cool kids making?? 👀
I easily found some at my local supermarket, bought it on impulse, and went home to figure it out. I haven’t touched cottage cheese since doing Weight Watchers in like high school 😅 but this? This bowl changed my mind.
We’ve got air-fried sweet potato, spiced beef mince, creamy cottage cheese, and my own homemade hot honey so I didn’t have to spend $$$ on a bottle.
Plus I threw in some lettuce because fibre matters just as much as protein, okay?

- Make the Hot Honey: In a small saucepan, warm the honey with chilli flakes and apple cider vinegar over low heat. Let it infuse for 3–5 minutes, then set aside to cool. Strain into a clean jar
- Roast the Sweet Potatoes: Preheat your air fryer to 200°C. Toss sweet potato cubes with spray oil, salt, pepper, and paprika. Air fry for 20–30 minutes, shaking halfway, until crispy and golden.
- Cook the Beef: In a pan over medium-high heat, cook lean beef mince until browned. Stir in taco seasoning and tomato paste, and cook until fragrant.
- Assemble the Bowls: In each bowl, place lettuce, air-fried sweet potatoes, beef mince, and cottage cheese. Top with avocado, jalapeños, coriander, and a squeeze of lime. Finish with a generous drizzle of hot honey.
