Beef Nachos Bowl with a Quick Guacamole
I come to you with something a little different today. I’ve been choosing some lighter options for during the week and this is one of them. Adapted from the recipe from the CSIRO from their Low Carb Diet cookbook, I’ve changed a few things including removing the cucumber as I’m not a massive fan, and adding in corn (which has more carbs but adds a sweetness this dish needs). The quick guacamole is the dressing but some people might need a little more, so you can always add a dollop or two of high protein Greek yoghurt instead of sour cream if you fancy.


Beef Nachos Bowl with a Quick Guacamole

- 2 spray cooking oil
- 600g lean beef mince
- 1 tbsp smoked paprika
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 garlic clove, minced
- 1 tbsp tomato paste
Quick Guacamole
- 1 avocado
- 1 tbsp low fat Greek yoghurt
- juice of 1 lime
- ½ cup coriander leaves, finely chopped
To Serve
- 250g cherry tomatoes, halved
- 400g cos lettuce, shredded
- 2 cobs of corn, grilled and shucked
- 100g unsalted corn chips
- 80g grated cheddar
- coriander sprigs
Instructions
- Heat the spray oil in a large frying pan over a medium-high heat. Add the beef mince and cook, breaking it up with a wooden spoon, for 4-5 minutes or until brown and cooked through. Add the paprika, cumin, ground coriander, garlic and stir through for 1 minute or until fragrant. Add the tomato paste and 80ml of water and stir for 1-2 minutes until well combined. Set aside.
- Make the quick guacamole, mash the avocado with a fork in a bowl. Add the yoghurt, lime juice and chopped coriander and stir until combined.
- Divide the beef between four bowls and serve with the tomato, lettuce, corn, corn chips, cheese, coriander sprigs and a dollop of guac.
