Outdoors. A theme that stumped me. It’s not a complex theme, I flicked through picnic cookbooks and the like but wasn’t inspired by any of them. I tweeted what to do, and someone (I can’t remember who, sorry!) suggested I make s’mores. For you people that aren’t American like me, “A s’more (sometimes spelled “smore“) is a traditional nighttime campfire treat popular in the United States and Canada, consisting of a roasted marshmallow and a layer of chocolate sandwiched between two pieces of graham cracker.” – Wikipedia.

I’d seen recipes for s’mores before and wanted to try them, but new they didn’t look like the healthiest thing around. But sometimes, you just gotta give those things a go to see what the fuss it about. I bought the book Snowflakes and Schnapps a while ago; it’s a gorgeous book with some lovely European recipes, perfect for Winter. I still had my after Christmas sale panettone in the pantry, so I decided to give the panettone s’more a whirl.

Yes, of course it was awesome. Yes, whilst we were eating it we commented that it didn’t taste like we were going to lose weight… and yes, you should most definitely try it once in your life! I forgot to sprinkle cinnamon on the top, I only did icing sugar. The cinnamon might have helped cut through the sweetness a bit. The gooey marshmallows and chocolate were pure awesome though. I’m glad I can tease you all with this bit of food porn 😛

Panettone, Chocolate & Marshmallow Melts

1 large panettone, cut into eight 1cm (1/2 inch) thick slices
100g (3 1/2 oz) unsalted butter, softened
Amaretto for sprinkling (I used Frangelico instead)
2 x 100g (3 1/2 oz) thin blocks of dark chocolate (70% cocoa)
12 white marshmallows, cut in half
30g (1 oz / 1/4 cup) icing sugar
1 teaspoon ground cinnamon

1. Trim the edges of each slice of panettone so that you have eight near 10 x 10 cm (4 x 4 inch) squares. Cut each square in half to form sixteen smaller 5 x 10 cm (2 x 4 inch) rectangles. Liberally butter one side of each piece.

2. Lay a piece of plastic wrap on a clean work surface and place eight panettone slices, buttered side down, on the wrap. Sprinkle a little Amaretto over the top. Use a very sharp knife dipped in hot water and cut each block of the chocolate into four wide strips; lay one piece of each of the panettone fingers, then add three marshallow pieces along the length of the chocolate. Top with another piece of panettone, buttered side up, to make a ‘sandwich’. You should end up with eight small sandwiches in total.

3. Heat a large frying pan over medium head. Carefully lift up each sandwich, holding them together to make sure the filling doesn’t fall out and cook for 2-3 minutes on one side, before carefully turning over and cooking the other side for 2-3 minutes, or until both the chocolate and marshmallows have melted and the panettone is golden and crisp. Remove from the pan and place on a serving platter.

4. Mix the icing sugar and cinnamon together and sift over the hot sandwiches. Serve immediately.

Serves 8.

    oooh panettone s’mores, lovely! The panettone gives it a classier edge, I feel 🙂 I have never tried a s’more, myself. I suppose i just may this year when I head over to the USA. I’m sure these went down a treat!

    Oooo..look at the chocolate that is oozing out of the smores. It looks totally delightful! I wish I can have a bite of it. Seems like I’m not alone – this outdoors theme stumped me too! I love your creative take on this outdoors theme – an american campfire treat. After reading this post, I have some inspiration on what I should make for this theme:)

    Oh my god S’mores are the best things ever. When I was a camp counsellor at Camp America, we used to make them all the time. I wish they sold graham crackers here in Australia…

    Great idea, they look delicious. I like Jane Lawson’s cookbooks and have picked up this one up quite a few times thinking I’d like to have it, but never quite convinced myself to buy it. Do you use it often? The photography in it is gorgeous.

    I quite liked the outdoor theme but I was stumped because the things I love most at picnics are ones I have already blogged and the weather just wasn’t letting me get out for picnics! But I never thought of campfires – great idea!

    We used to do marshmallows on the bonfire and bananas and chocolate in foil in a campfire when I was little but this is just brilliant – have seen the term smores around but never realised it was about campfire treats – now I want some – looks so so good
