2.5 Minute Chocolate Cake-Pudding

Surely by now you’ve heard of the 5 minute mug cake. I only made it once when I was looking after my cousins one night and we wanted something sweet to eat after a pizza dinner. Whilst it was okay, it wasn’t something I felt I needed to make again. But when I saw this recipe in the Herald Sun that included Nutella, I knew I had to make it!

The first time I made it I felt like 3 minutes was too much, the cake was rather overcooked. Penny told me she always cooks hers for 2.5 minutes to achieve a gooey middle. So I cooked it for 2.5 minutes and it was perfect. Whilst it wasn’t gooey, it definitely wasn’t overcooked; and the pockets of melty Nutella were amazing.

So depending on the strength of your microwave, anywhere between 2-3 minutes should be fine.

2.5 Minute Chocolate Cake-Pudding
Adapted from the Herald Sun’s 3 minute version

4 tablespoon self-raising flour
2 tablespoons cocoa
3 tablespoons caster sugar
1 free range egg, whisked
3 tablespoons milk
3 tablespoons rice brain oil (or vegetable/sunflower oil)
3 tablespoons Nutella
2 tablespoons grated chocolate (milk or dark), optional
Ice Cream, to serve

1. Sift the flour and cocoa and place in a large heatproof mug or divide between two mugs with sugar.

2. Add the egg, milk and oil and mix together thoroughly, making sure there are no lumps.

3. Stir in nutella and grated chocolate, if using.

4. Cook in a microwave for about 3 minutes on high. The mixture may rise over the top of the mug, but will settle when cooked and cooled a bit.

5. Serve with a big scoop of ice cream.

Serves 1-2.

    The mugs are soooo cute!! I’m going to have a look at Mozi soon. I noticed a store on Glenferrie Rd.

    I was so going to make these tonight as a pick me up but then I realized they need nutella. Boo, no Nutella in the pantry. Will have to try it out some other time for a quick sweet treat!

    *jumps up and down* I’ve had a jar of Nutella in my fridge for over a month, since I last made my Nutella fudge, and I’ve been trying to think of what to do with it (all the while slowly hacking away at it with a spoon…) Can’t wait to try this tomorrow!

    Haha omigosh all my 5 minute cakes have been total disasters (all my 1 hour cakes too but let’s not go there)! Oily, gloopy, and/or the texture of vinyl tubing. I should try this one and will let you know how I go ๐Ÿ˜‰
