Tori to Renkon no Pasta (Chicken and Lotus Root Pasta
Lotus roots aren’t essential for this dish, but I had a bag in the freezer, so in they went! They add a nice bit of texture and an extra veg boost.
I love the creaminess of this one, paired with wide pasta and all that umami from the mushrooms and parmesan. I’ve made a few different versions since, and honestly, it’s damn delicious every time.
