Dorayaki (Red Bean Pancakes)

I've got a craving for them now. So fluffy, so addictive, and excellent with a range of different spread.

This blog post is part of my special series to journal the Umai cookbook, from cover to cover :)

Dorayaki (Red Bean Pancakes)

These were so good. It’s like two pikelets filled with red bean and cream, enjoyed warm or at room temperature. I’ve never see them with cream before but decided it was time, and after all, I’m following the recipe!

When shopping I came across Sad Girl’s matcha spread and thought this might also be a great flavour to try in the doriyaki – and it was a dead set winner! Already planning to make these again soon, when I don’t have to share with anyone!
