Taco Rice (Okinawan Taco Rice)

I’d been wanting to try this dish for ages. I wasn’t sure if Ewen would go for it, he’s not a fan of fresh tomatoes, and I figured they’d be a key part of what makes the dish shine. But cooking my way through the book gave me the perfect excuse to finally give it a go… and I loved it.

I also really liked that the recipe included mushrooms to help bulk out the mince, extra veg is always a win. The sour cream? Totally brought everything together.

Can’t remember what I was planning for the little side dish next to the taco rice, but we had some corn chips lying around and honestly, it just felt right.
