I’ve never really been a fan of fish and chips. At least I don’t think so…. I can’t recall a lot of fish and chips during my childhood. Last year for Easter, I insisted we have them, as all the cool kids were doing it. It was so oily and greasy, I remembered why I didn’t like fish and chips. I didn’t learn though. This year I made Hamsley and I get fish and chips on Good Friday this year, and it was even more greasier than last year!
The Good Food magazine arrived and it had a good looking recipe for fish and baked chips. I haven’t cooked all that much fish in my lifetime. I think it’s almost a phobia, as I don’t really know how to gauge when it’s cooked, and I don’t know what fish to substitute with if the recipe says, for example “or any other white fish”. This started a craving for fish and chips again, so when we went to Costco, I found some nice looking white ling fish, and the rest is history.
The batter was lovely, with a twist of lemon. As I was battering the fish, it smelt like a good fish and chip shop, so it was very promising.
The result was fantastic! It wasn’t greasy at all, but that was helped but the minimal oil used, and the paper towel to soak up any oil. The fish was cooked to perfection! It just melted away, and had no bones (thanks Costco!)
My chips were a little stumpy as I only had small potatoes left in the pantry, but they still turned out fine, and definitely not greasy, soggy or gross!
Served with aioli and perinaise (because we ran out of aioli)…. yum!

Crunchy Fish Fingers & Baked Chips
750g desiree potatoes, peeled, cut into thick chips
1/4 cup plain flour (seasoned)
1 cup packaged breadcrumbs
Grated rind of 1 lemon, plus lemon wedges to serve
2 eggs, lightly beaten
600g firm white fish fillet, such as blue-eye, trevalla, skin removed
1/4 cup rice bran oil
Mayonnaise, to serve
1. Preheat oven to 220ºC. Line two baking trays with baking paper. Spray with oil.
2. Place potato in a single layer on trays. Spray with oil. Bake for 30 minutes or until golden.
3. Meanwhile, place flour in a bowl. Combine the breadcrumbs and lemon rind in a separate bowl. Place egg in another bowl. Cut fish into 8cm x 3cm pieces. Dust the flour, shaking off any excess. Dip into egg, then breadcrumbs, pressing lightly to coat. Chill for 5 minutes.
4. Heat oil in a pan on medium. Cook fish fingers in batches from 3 minutes each side, until golden and cooked through. Drain on paper towel. Serve with chips, lemon wedges, mayonnaise and a salad.
Serves 4.

Wowzers. Impressive, lady. Those look legitimately like crunchy crunchy goodness! (Though, that said, I’ve never been big on fish and chips either. Give me sashimi with wasabi anyday 😉 )

Well done Shellie, love the pic’s and I am sure now you have found a ‘Great Recipe’, you will making them again. soon. ‘ Flake’ is another really Sweet Tasting Fish. I am not big on Fish but have always found ‘Flake’ mouth meltingly scrummy especially if nice and fresh. Well done.

I have always steered away from cooking fish, cause I didn’t know how long to cook it for. But I do love to eat it though! I hate that fish and chip shops sell shark as ‘fish.’ That really erks me! Barramundi is a beautiful fish for fish and chips.

Hooray for overcoming your fish & chips dislike with a good recipe! Looks fantastic.
Bad fish & chips is a terrible, terrible thing. When it’s so greasy that it makes you feel sick, and you vow never to eat it ever again! So many places make it like that. At least a lot of places now let you order your fish crumbed or grilled instead of battered so you can somewhat restrict your grease overload to the chips and any other extras!

aaahhhh, so glad you’ve beaten the ‘bad fish ‘n chips’ issue & found the right recipe. Nothing better than a great big old feed of fish ‘n chips especially if your hanging out down at the coast. Its tradition in our family.
