I've made a similar dish before using eggplant, but really enjoyed the texture the lotus root gave in this dish.

Torizume Renkon (Chicken-Stuffed Lotus Root)

Definitely an unexpected standout. I’ve made something similar with eggplant before, but had completely forgotten about it, until that first bite brought it all back. Absolutely delicious, and the sauce really takes it to the next level. I’d happily make this one again.
