Matcha to Choco no Cookie (Matcha and White Chocolate Biscuits)

The first recipe I’ve had a bit of trouble with, but I’d still make it again. I think I’m just used to a more buttery cookie texture. That said, matcha and white chocolate really are a matcha made in heaven!

Matcha to Choco no Cookie (Matcha and White Chocolate Biscuits)

Matcha and white chocolate are such a dreamy combo, I was really excited to try these. I started off by doubling the recipe (because more cookies = more joy), but the dough didn’t quite come together like the book described. It was too crumbly to roll out and use a cookie cutter, so I figured I’d try again with a single batch… same result.

I ended up shaping the dough into a log, chilling it for a bit longer, and slicing cookies from that. It worked much better. If I make them again, I might try adding a little more butter for a softer texture and extra richness. Still a great flavour pairing that I’d happily revisit.
