Heat the spray oil in a large frying pan over a medium-high heat. Add the beef mince and cook, breaking it up with a wooden spoon, for 4-5 minutes or until brown and cooked through. Add the paprika, cumin, ground coriander, garlic and stir through for 1 minute or until fragrant. Add the tomato paste and 80ml of water and stir for 1-2 minutes until well combined. Set aside.
Make the quick guacamole, mash the avocado with a fork in a bowl. Add the yoghurt, lime juice and chopped coriander and stir until combined.
Divide the beef between four bowls and serve with the tomato, lettuce, corn, corn chips, cheese, coriander sprigs and a dollop of guac.
