Pear & Chocolate Croissant Cakes

Because, why not?

Indulgent breakfast or comforting dessert, dress those drab stale croissants into something fabulous!

Pear & Chocolate Croissant Cakes
Valli Little

6 bought mini croissants
6 small pears (such as Corella)
100g good-quality dark chocolate, chopped
250ml milk
250ml cream
3 eggs
95g light brown sugar
1 teaspoon vanilla extract
Icing sugar, to dust

1. Preheat oven to 170Β°C. Grease a six-hole Texas muffin pan.

2. Cut each croissant into six pieces. Cut the tops off each pear and reserve, then core and cut into thin slices.

3. Fill each muffin hole with alternating pieces of croissant, pear and chocolate, finishing with reserved pear tops.

4. Beat together milk, cream, eggs, sugar and vanilla. Pour over croissant mixture and set aside for 20 minutes. Bake in oven for 30 minutes until golden. Dust with icing sugar and serve.

    Aaaa I was smitten by that photo of the spilt milk, tells such a story! It’s like saying ‘awww I really wanted to be in that cup of tea, but oh well…’. :p

    Yummy concept too, using bought mini croissants to make this delectable looking sweet.
