Romesco Soup with Chicken & Chorizo

It’s time to take back Sundays with another great recipe inspired by Campbell’s Real Stock.

An easy recipe that takes minimum effort, and produces maximum flavour. The smokiness of the paprika, and the richness of the capsicum make for the ultimate bowl of awesomeness. Add chicken and you’ve got yourself a meal in a bowl, and bound to please anyone who loves chicken, like my Hamsley.

Serve this soup with crunchy bread, and good company.

Romesco Soup with Chicken & Chorizo
(Adapted from Australian Good Food magazine)

4 chicken drumsticks, skin removed
4 small red capsicums
2 teaspoons olive oil
1 cured chorizo sausage, coarsely chopped
2 eschalots, finely chopped
2 garlic cloves, finely chopped
1 teaspoon smoked paprika
5 cups (1.25L) Campbell’s Real Stock – liquid chicken stock
2 tablespoons red wine vinegar
2 tablespoons almond meal

1. Preheat oven to 180° or 160° fan. Season chicken and roast for 40-45 minutes, until browned and cooked through.

2. Meanwhile, place capsicum on a baking tray and roast for 10-15 minutes, until skin blackens. Transfer to a heatproof bowl. Cover and cool for 10 minutes. Peel and removed seeds. Slice.

3. Heat oil in a saucepan on medium, add chorizo, eschalots and garlic. Cook, stirring occasionally for 3 minutes or until chorizo begins to colour. Stir in paprika and cook for a further 1 minute.

4. Increase heat to high, add Campbell’s Real Stock, vinegar and capsicum. Bring to boil. Reduce heat and simmer, covered for 25-30 minutes, until reduced slightly. Remove from heat and transfer chorizo to a plate. Stir in almond meal and use a stick blender to process until smooth.

5. Shred chicken meat, mix with chorizo and place in bowls. Ladle soup over and serve.

Serves 4.

    Is this soup a little bit spicy with the mix of chorizo and paprika?

      Ohhhhhhhhhhhhhh. This soup is divine, people! You must all try it! I can officially vouch for how delicious it is as I cooked it for myself and my partner tonight, and we both loved it so much that it going to becoming a regular! It was so simple yet so delicious.
